1 tube polenta
1 tablespoon olive oil (just enough to coat)
1.5 tsp onion powder
2 tsp garlic salt
Optional but definitely recommend-
sprinkle of chili lime seasoning (Trader Joe’s)
sprinkle of Everything but the Bagel seasoning (Trader Joe’s) or my DIY everything but the bagel seasoning (here)
If you don’t have or use those you can always sprinkle on paprika and black pepper to taste. another option is italian seasoning or lemon pepper seasoning.
Preheat oven to 375. Cut polenta tube in half and then slice each side lengthwise, (about 1-2 cm in thickness) it should make about 5-6 long slices per half (it sounds complicated but i promise it’s simple). Then, cut each long slice on the diagonal into four triangles.
Coat in olive oil and seasoning, make sure it’s coated evenly or stirred really well. Place on a baking sheet and bake for 34 minutes. They get more evenly crispy if you stir them around halfway through. The everything seasoning gets crispy and adds so much texture and these are the perfect little side or addition to any meal! They’re also great as a gluten free crouton. You can serve warm or cold, with a dipping sauce, or plain! Feel free to get creative with seasoning, the flavor is neutral on its own so it can go with a lot of different types of food!
